Mitsu London is a new restaurant opening in early 2026, inspired by the energy of East London and the neighbourhood izakayas of East Tokyo. The concept combines Japanese robata grilling and kamameshi rice with a dynamic Shoreditch atmosphere, offering a menu designed for sharing, along with crafted cocktails, sake, and iced mizuwari. Guests can enjoy a vibrant social experience with a private karaoke room and DJ sets by local artists, making Mitsu a destination for both everyday dining and special occasions. Whether for lunch, after-work relaxation, dinner, or late-night celebrations, Mitsu aims to become a go-to venue for memorable experiences.
Role Description
The Restaurant Manager is a full-time, on-site role based in London, responsible for overseeing daily operations and delivering an exceptional guest experience. This role manages front-of-house service, supports food and beverage quality standards, and ensures that all guests receive attentive and efficient service.

The Restaurant Manager leads, trains, and schedules the team, handles hiring and performance feedback, and promotes a positive, inclusive workplace culture.

Day-to-day responsibilities include:
- Supervising service during shifts
- Monitoring reservations and walk-ins
- Coordinating with the kitchen and bar teams
- Managing customer feedback
- Maintaining health, safety, and cleanliness standards
The role also involves:
- Supporting budgeting and cost control
- Optimizing staffing and inventory
- Contributing to promotions and events that reflect Mitsu’s brand and atmosphere
Qualifications
- Strong focus on Customer Satisfaction and Customer Service, with experience creating memorable guest experiences in a fast-paced environment.
- Proven Hiring and people management skills, including recruiting, training, scheduling, and coaching diverse teams.
- Excellent Communication skills, with the ability to coordinate across front-of-house, kitchen, and bar, and to handle guest feedback professionally.
- Practical Food & Beverage knowledge, including menu understanding, service standards, and basic bar and dining operations.
- Previous experience in restaurant or hospitality management, ideally in high-energy or concept-driven venues.
- Ability to work flexible hours, including evenings, weekends, and holidays, as required by restaurant operations.
- Strong organizational and problem-solving skills, with attention to detail and commitment to health and safety standards.
- Knowledge of local licensing, hygiene regulations, and compliance requirements in London is an advantage.
- Experience with reservation systems, POS platforms, and basic financial reporting is beneficial.
