Overview of the Role

As a Kitchen Server (KS), you’ll act as the eyes and ears between the kitchen and the dining room—ensuring seamless communication, clear food delivery, and smooth service flow.

You’ll play a key role in upholding NoMad’s food philosophy, understanding seasonality, ingredient origins, and techniques. It’s essential to maintain consistent food knowledge across all outlets, including:

  • Ingredients
  • Preparations
  • Allergens
  • Possible modifications for all dishes

Expectations

Kitchen Servers at NoMad must:

  • Be professional at all times
  • Act as a positive ambassador for the brand
  • Strictly adhere to company policies, including:
    • Health & Safety
    • HR protocols
    • Employee handbook guidelines
  • Role-model NoMad’s values through every customer interaction

Main Duties & Responsibilities

(This list is not exhaustive.)

Knowledge & Communication

  • Match Waiter-level food knowledge, covering dosage, allergens, and dish modifications.
  • Demonstrate hotel history, interior details, and supplier relationships.

Service & Operations

  • Implement open-handed service and perfect dish presentation.
  • Set up kitchen passes for service, ensuring:
    • Stations are stocked
    • Tools are available
    • Multitasking between kitchen and floor teams
  • Assist with high-standard polishing (cleanliness) and operational tasks as needed.

Customer & Team Focus

  • Explain every dish on the menu in detail.
  • Master traffic patterns, positioning numbers, and section plans.
  • Keep a clear overview of on-site team structures.
