About the Role
This critical role is responsible for leading the financial strategy, planning, and performance management of Premier Inn’s Fast & Flexible (F&B) business. The position collaborates closely with the Head of F&B, providing essential commercial insight, financial challenge, and strategic decision support to optimise revenue, margin, and profitability.
Through ownership of planning, forecasting, analysis, and performance reporting, this role influences key decisions across pricing, product, supply chain, and labour, driving sustainable long-term growth.
The position holds full accountability for:
- F&B budgeting, forecasting, and performance reporting
- End-to-end commercial finance support
Additionally, the Senior F&B Finance Manager leads a multi-manager team to ensure high-quality analysis, strategic decision support, and robust operational partnerships.
Responsibilities
1. Commercial Strategy & Leadership
- Lead the financial aspects of F&B strategy, shaping long-term revenue, cost, and margin plans.
- Provide financial insight and challenges on pricing, product mix, category optimisation, and promotions to maximise sales profitability and return on investment (ROI).

2. Menu & Product Economics
- Lead financial planning for all menu cycles, analysing dish and category performance.
- Model the impact of pricing adjustments, promotional campaigns, inflationary pressures, and supplier changes to support commercially robust menu development.
3. Financial Planning & Forecasting
- Own end-to-end budgeting and forecasting across all revenue and cost components in F&B.
- Integrate market trends, supply chain dynamics, and operational insights into clear scenario-based financial plans.
4. Performance Insight & Reporting
- Deliver executive-ready performance reviews and automated reporting that focus on critical drivers such as:
- Pricing impact
- Cost of sales
- Waste management
- Labour efficiency
- Operational execution
5. Operational Partnership & Profitability
- Collaborate with Supply Chain and Operations to improve:
- Stock accuracy
- Waste reduction
- Site-level profitability
- Lead margin improvement initiatives and develop a high-performing F&B finance team.

Requirements
Professional & Leadership Skills
✔ Proven ability to lead and develop finance teams, ensuring high-quality insight, reporting, forecasting, and decision support. ✔ Strong track record of owning budgeting, forecasting, and financial planning processes, including performance management and variance analysis under a multi-site, commercial business. ✔ Ability to shape and deliver commercial/financial strategy, translating long-term objectives into actionable, measurable plans.
Analytical & Finance Expertise
✔ Advanced financial modelling and data analysis skills to:
- Assess investment opportunities
- Test business assumptions
- Support commercial decision-making ✔ Experience interpreting commercial trends, cost drivers, and ROI, with an ability to challenge and influence senior stakeholders.
Sector Knowledge & Industry Awareness
✔ Familiarity with operating in a large, multi-site consumer-facing business, ideally within hospitality, retail, leisure, or F&B. ✔ Knowledge of industry-specific challenges (e.g., inflation, supply chain volatility) and their financial impacts.
Qualifications
📜 Qualified accountant (ACA, ACCA, CIMA) or equivalent industry experience.
