About the Role

This critical Senior F&B Finance Manager position is responsible for driving the financial strategy, planning, and performance management of Premier Inn’s Food & Beverage (F&B) business. Reporting closely with the Head of F&B, the role provides essential commercial insight, financial challenge, and strategic decision-making to optimise revenue, margins, and profitability—shaping a sustainable long-term growth trajectory.

Key activities include:

  • Leading planning, forecasting, analysis, and performance reporting.
  • Supporting decisions on pricing, product offerings, supply chain efficiency, and labour optimisation.
  • Holding full accountability for the F&B budget, forecasting, performance reporting, and end-to-end commercial finance support.

The role also involves guiding a small multi-manager finance team in delivering high-quality analysis, strategic data-driven recommendations, and fostering strong operational partnerships.


What You’ll Be Doing

1. Commercial Strategy & Leadership

  • Lead the financial components of the F&B strategy, aligning revenue targets, cost controls, and margin objectives.
  • Provide robust financial backing for key decisions—including pricing, product launch decisions, category management, and promotions—to maximise ROI.
  • Challenge assumptions and ensure every initiative delivers quantifiable business impact.

2. Menu & Product Economics

  • Oversee financial planning throughout each menu cycle, analysing performance trends at the dish and category level.
  • Model price changes, promotional strategies, inflation impacts, and supply chain adjustments to refine commercial viability.

3. Financial Planning & Forecasting

  • Own, highlight, and deliver end-to-end budgeting across all F&B revenue and cost streams.
  • Develop dynamic forecasting models, incorporating real-world trends, operational data, and supplier variables for scenarios that aid decision-making.

4. Performance Insight & Reporting

  • Generate executive-focused breakdowns, highlighting profitability drivers, cost of sales, waste, labour efficiency, and operational execution patterns.

5. Operational Partnership & Profitability

  • Collaborate with Supply Chain and Operations teams to enhance stock accuracy, waste reduction, and on-site profitability.
  • Lead margin improvement initiatives and nurture a high-performing F&B finance team to drive excellence.

What You’ll Need

Essential Experience & Skills

  • Proven track record of leading finance functional teams, delivering accuracy-driven reporting, forecasting, analysis, and strategy support.
  • Strong ownership of budgeting, forecasting, and financial planning, including performance management frameworks and scenario modelling.
  • Ability to craft financial strategy that bridges vision and execution, delivering direct commercial change.
  • Advanced financial modelling & data analysis expertise, rooting recommendations in hard evidence.
  • Track record of property-based decision-making underpinned by sound financial assessments.
  • Confidence to challenge senior stakeholders with convincing insight and deliverable recommendations.
  • Ability to thrive in large matrix environments, particularly those with a multi-site consumer-facing operation (e.g., hospitality, retail, or leisure).

Qualifications

  • Qualified Accountant (ACA, ACCA, or CIMA). or
  • Equivalent experience simulating full-funnel financial oversight.
