Senior F&B Finance Manager

Role Overview

Contract Type: Permanent Location: Hybrid working from Dunstable office (Luton, LU5) – 3 days a week

This role is responsible for leading the financial strategy, planning, and performance management of Premier Inn’s F&B (Food & Beverage) business. Working closely with the Head of F&B, it provides commercial insight, financial challenge, and strategic decision support to optimise revenue, margin, and profitability.

Through ownership of planning, forecasting, analysis, and performance reporting, the role influences critical decisions across pricing, product, supply chain, and labour, helping to deliver sustainable, long-term growth.

The position holds full accountability for:

  • F&B budgeting, forecasting, and performance reporting
  • End-to-end commercial finance support
  • Leading a multi-manager team to deliver high-quality analysis, strategic decision support, and operational partnership.

Key Responsibilities

1. Commercial Strategy & Leadership

  • Lead the financial aspects of F&B strategy, shaping long-term revenue, cost, and margin plans.
  • Provide financial insight and challenge on pricing, product, category, and promotional decisions to maximise sales, profitability, and ROI.
  • Drive data-led decision-making to optimise commercial performance.

2. Menu & Product Economics

  • Oversee financial planning for all menu cycles, analysing dish/category performance.
  • Model the impact of pricing changes, promotions, inflation, and supplier adjustments to ensure commercially robust menus.
  • Balance profitability with guest satisfaction to maintain competitive menu valuing.

3. Financial Planning & Forecasting

  • Own end-to-end budgeting and forecasting across all F&B revenue and cost lines.
  • Integrate market trends, supplier dynamics, and operational insights into clear, scenario-based financial plans.
  • Continuously refine forecasting processes to improve accuracy and business agility.

4. Performance Insight & Reporting

  • Deliver executive-level performance reviews with deep commercial and financial insights.
  • Produce automated, data-driven reports highlighting trends in pricing, cost of sales, waste, labour, and operational execution.
  • Translate financial data into actionable recommendations for stakeholders.

5. Operational Partnership & Profitability

  • Partner with Supply Chain and Operations to:
    • Improve stock accuracy and reduce waste.
    • Enhance site-level profitability.
  • Lead margin improvement initiatives and develop a high-performing F&B finance team.

Essential Requirements

  • Proven ability to lead a finance team, delivering:
    • High-quality insight, reporting, forecasting, and decision support.
  • Strong track record of owning end-to-end financial planning, including:
    • Performance management.
    • Scenario modelling and forecasting.
  • Experience in shaping commercial/financial strategy, translating long-term objectives into actionable plans.
  • Advanced financial modelling and analytical skills, using data to:
    • Assess opportunities.
    • Challenge business assumptions.
    • Support investment and commercial decisions.
  • Credibility and influence to:
    • Challenge and provide financial recommendations at senior levels.
    • Drive business performance improvements.
  • Operational knowledge of a multi-site, consumer-facing business, ideally within:
    • Hospitality, retail, leisure, or a similar high-volume sector.
  • Qualified accountant (preferably ACA, ACCA, or CIMA) or equivalent experience.
