Senior Sous Chef – ETM Group (Kitty Hawk, London)
About the Role
At ETM Group, being a Senior Sous Chef is more than just a cooking role—it’s a leadership position essential to kitchen management. You’ll work closely with the Head Chef to deliver culinary excellence, drive team performance, and ensure our seasonal, modern menus are executed flawlessly while upholding our premium hospitality standards.
As a key member of our ETM Collection (rooftop dining, refined restaurants), your role spans:
- Operational leadership – Overseeing day-to-day kitchen operations with precision
- Team development – Mentoring chefs while maintaining ETM’s EPIC values (Excellent, Passionate, Integrity, Challenging)
- Service excellence – Supporting service teams for seamless guest experiences
- Financial & operational control – Balancing quality with cost efficiency
- Leadership in absence – Stepping up as a reliable supervisor when needed

Key Responsibilities
- Menu Execution: Collaborate on seasonal menus, ensuring consistency, creativity, and high standards across all venues.
- Kitchen Management: Lead operational efficiency—from prep and plating to inventory and waste reduction.
- Team Leadership: Provide mentorship, training, and performance guidance to kitchen staff.
- Commercial Awareness: Contribute to kitchen financials, including GP control and cost optimization without compromising quality.
- Service Support: Bridge the gap between kitchen and front-of-house for flawless dining experiences.
- Demand Adaptability: Effectively manage busy shifts in our fast-paced, high-footfall kitchens.
- Culture-Shaping: Foster a collaborative, aspirational working environment aligned with ETM’s values.

Requirements & Skills
Essential
- Proven track record as a Sous Chef or Senior Sous Chef, with experience in high-end or multi-site hospitality environments.
- Strong operational leadership—able to adapt to fast-paced kitchens and high service demands.
- Deep knowledge of food safety, standard operating procedures, and premium menu development.
- Awareness of kitchen costs, portion control, and financial management (e.g., GP control, stocking discipline).
- Technical skill in execution standards—flawless plating consistency and confident delegating.
Preferred
- Familiarity with rooftop dining or fine-dining service.
- Commercial experience in multi-unit hospitality or larger teams.
- Leveraged problem-solving in high-pressure scenarios (e.g., last-minute menu adjustments).
- Experience using hospitality management tools or inventory systems.
