Estelle Manor Senior Sous Chef – Pastry Senior Sous Chef (Pastry) | £51,700 p.a. (OTE) | 45-hour contract

Estelle Manor is a rural retreat on an 85-acre estate in Oxfordshire. Discover:

We’re expanding our talented Pastry team, seeking a passionate Senior Sous Chef to join us.


The Role: Senior Sous Chef (Pastry)

Key Responsibilities:

  • Collaborate closely with the Pastry Executive Chef to manage and lead the Pastry & Bakery kitchen
  • Contribute to the food concept vision, developing innovative menus and identifying new culinary opportunities
  • Prepare menu briefs across departments, ensuring all information is current – including provenance, allergens, nutritionals, and other specifications
  • Oversee budgets, kitchen operations, and standards, liaising with senior leadership to maintain health & safety compliance
  • Stand in senior chef in absence, empowered to execute managerial decision-making for kitchen workflows and quality

Requirements

We’re seeking a strategic thinker with:

  • 5+ years’ experience as a Pastry Chef/Sous Chef
  • Chaperoned leadership in team building, operational standards, or training
  • Hands-on flair with HACCP, pastry craft, and menu innovation
  • British hospitality experience preferred

Aspiring culinary team members with proof of skills in our exam-format interviews may also be considered.

Please note: Trade school or chef apprenticeship with specialist experience can suffice.
