Sommelier - Coreus by Clare Smyth Waldorf Astoria London – Admiralty Arch, Pre-Open Team

We are seeking an experienced luxury sommelier to join the pre-opening team of Waldorf Astoria London – Admiralty Arch, a landmark hotel due to launch later this year. Ideal candidates will shape the guest experience and uphold the highest standards of five-star hospitality in this iconic location.

About the Role

Sitting at the end of The Mall, opposite Buckingham Palace, this 17,500 sqft hotel comprises:

  • 100 elegant rooms and suites
  • 17,500 sqft of private residences
  • A world-class spa and state-of-the-art fitness facilities
  • A grand ballroom seating 320 guests
  • Two disciplinary restaurants:
    • Coreus by Clare Smyth (signature cuisine)
    • Café Boulud by Daniel Boulud (Michelin-starred chef collaborations)

The role marks a unique opportunity to join Waldorf Astoria, Hilton’s flagship luxury brand, synonymous with timeless elegance and bespoke experiences.


Responsibilities

As the Sommelier at Coreus by Clare Smyth, your duties include:

  • Elevating the wine experience:
    • Offer authoritative, confidential guidance for guests, precision-matched to menus and occasions.
    • Upsell wines thoughtfully with status-sensitive discretion.
  • Menu collaboration:
    • Contribute to wine selections aligning with new menus, budgetary goals, and commercial targets.
  • Exceptional service delivery:
    • Personally curate pairings through time-honoured wine knowledge.
    • Manage accurate billing, beverage compliance (licensing/licorice laws for both residents and guests).
    • Embed readiness in all safety & security protocols.
  • Training & teamwork:
    • Participate fully in lantern training initiatives.

Requirements

Essential Qualifications

  • Proven guest-facing experience within hotel, luxury hospitality, or premium retail.
  • Unmatched luxury personal presentation & grooming standards to reflect brand ambassadorship.
  • Exceptional verbal skills and charismatic service approach engaging diverse guests.
  • Passion for wine, hospitality, and outstanding guest experience.
  • Self-motivated yet cohesive in team dynamics.
