About the Role
As Sommelier, you’ll fully embrace Six Senses’ vision of helping guests reconnect with themselves, others, and the world around them. This is a 2-month fixed-term contract to support our team during the summer months.
Responsibilities
Collaborative Leadership & Operations
- Work closely with the Director of Wine and Restaurant Management to ensure smooth efficiency and operation in wine service.
- Stay current with industry trends and practices to refine products and services.
Crafting Memorable Guest Experiences
- Deliver an exceptional in-person guest experience.
- Handle service recovery confidently when dealing with guest complaints.
- Conduct Wine Seminars, Tastings, and Dinners for guests.
- Organise Wine Training Sessions for Restaurant and Beverage Hosts.

Curated Wine Expertise
- Properly decant older vintages with flair and traditional standards.
- Pair wines with food, recommending wines that enhance varied cuisines and cooking techniques.
- Oversee Wine List maintenance, ensuring accuracy, cleanliness, and timely updates.
- Adhere to LQA (Level of Quality Assurance) standards and incorporate guest feedback proactively.
Resource & Budget Control
- Assist with the operational budget to maximise profitability while minimising waste.

Qualifications & Requirements
Experience & Education
- Minimum: High school diploma or equivalent, with 3 years of experience in a similar operational role in luxury hospitality (preferably wine service).
- Preferred: Hospitality diploma/degree from an accredited institution.
- Proficiency in food and beverage terminology, operational wine service, cost control, menu development, and food hygiene standards.
- Outstanding inventory and client-facing skills.
Languages & Compliance
- Fluent in English; additional languages are desirable.
- Candidates must have the right to work in the UK (Sponsorship not available for this role).
