Sous Chef
Sous Chef | Quo Vadis Members Club & Restaurant | Soho, London
We are looking for a brilliant Sous Chef to join Harts Group as part of our exceptional culinary team at Quo Vadis, a historic restaurant and private members’ club in the heart of Soho, London.
About Quo Vadis
Quo Vadis is a landmarked restaurant and private members’ club steeped in history, having once been a dwelling for Karl Marx. Known as a Soho institution, it attracts an eclectic crowd drawn to the finest experiences in life.
The restaurant is critically acclaimed, serving seasonal Modern British Cuisine under the direction of renowned MBE-awarded Chef Jeremy Lee. His monthly menu is a celebration of the finest regional ingredients from across the UK and beyond.
In addition to fine dining, the club features three beautifully appointed private dining rooms, offering luxurious spaces for events and occasions. Chef Jeremy’s cooking is as bold, generous, and characterful as he is—a testament to his passion for exceptional hospitality and British heritage.

The Sous Chef Role
Key Responsibilities
- Manage all kitchen sections with confidence and precision
- Demonstrate a strong understanding of ordering, waste management, stock control, Chef rotas, costings, and gross profit (GP) analysis
- Balance flavours with expertise, reflecting a true passion for food and a commitment to personal culinary development
- Maintain exceptional hygiene and food safety standards, ensuring full compliance with regulations and allergen management
- Lead training programmes for kitchen teams, fostering growth and consistency
- Communicate clearly and collaboratively with all team members
- Personify Harts Group’s reputation for a friendly, warm welcome and service excellence
- Speak fluent English with clarity
- Ensure thick knowledge of Quo Vadis menus, ingredients, and allergens
- Exhibit a deep appreciation for British food and culture
- Lead by example—uphold the highest service and teamwork standards at all times

Requirements
- At least 1 year of experience in a similar role at a high-end restaurant kitchen
- Strong organisation, cost-conscious mindset, and analytical approach to kitchen operations
- A naturally strong team player—always respecting colleagues and fostering collaboration
- A passion for learning, innovation, and continuous improvement in both cuisine and hospitality skills
- Thrive in a dynamic, high-pressure fine dining environment
