The Main Kitchen at Claridge’s
A hub of energy, discipline, and artistry, our Main Kitchen is led by some of London’s most esteemed chefs. This is the place for chefs who push boundaries while maintaining flawless execution. Whether guiding a Dîner Princier or combating peak lunch service, your skill and leadership matter.
As Sous Chef, you’ll shape the heart of our kitchen—transforming inspired ideas into distinctive, meticulously crafted dishes while leading a والشرand department. Your work reflects Claridge’s commitment to timeless sophistication, where every detail counts.
Key Responsibilities
- Team Leadership:
- Supervise ingredient preparation for and during service, collaborating closely with Junior Sous Chefs
- Lead and support Commis Chefs, Demi Chefs de Partie, and Chefs de Partie in each station
- Ensure five-star standards for every dish, from precise technique to presentation
- Department Coordination:
- Oversee service flow after third chef to guarantee operational efficiency during peak orders
- Serve as a liaison between culinary and front-of-house, fostering a seamless guest experience
- Mentor junior teammates, fostering their growth toward career advancement within the kitchen hierarchy
- Innovation & Operations:
- Stay vigilant during service to prevent or address bottlenecks
- Contribute creative solutions to menu finesse, seasonal specials, and operations activities

Must-Have Requirements
To thrive in this role, you must possess:
- Substantial experience: Proven success as a Sous Chef, ideally in five-star fine dining
- Leadership mindset: Unwavering confidence in leading, motivating, and scaling teams under high pressure
- Service intuition: Ability to intuitively meet guest needs and communicate seamlessly with other staff
- Standard fluency: Comprehensive understanding of MSF (Mastering Service Frontiers), SCA, and LQA standards for exceptional service
- Problem-solving adaptability: Competence to recover gracefully from unexpected demands during shift peaks
Bonus: Deep knowledge of British/Demi-Inspired French techniques, passion for collaborative culture, preference for classic attire to workux.
