Sous Chef – Private Members Club at The National Gallery
We are seeking a Sous Chef for our new Private Members Club, situated in the stunning refurbished Sainsbury Wing of The National Gallery. This unique setting allows you to collaborate with Michelin-starred Chef Georgio Locatelli, delivering an exceptional dining experience to discerning members and guests.
Our Private Members Club at the National Gallery is nestled within one of London’s most iconic cultural landmarks. The National Gallery, located in Trafalgar Square, houses an unrivalled collection of Western European art, featuring masterpieces by artists like Leonardo da Vinci, Van Gogh, Turner, and Rembrandt. The gallery’s world-renowned exhibitions provide an unforgettable backdrop to your culinary career.
Role Overview
Searcys is renowned for its exceptional service, premium dining standards, and dynamic atmosphere. As Sous Chef, you’ll play a crucial role in shaping the club’s culinary vision while working alongside leading professionals in the hospitality industry.
About the Role
- Underscore & assist in the planning, preparation, and presentation of all meals across thePrivate Members Club
- Lead the brigade team in developing dynamic menus, dishes, and culinary concepts
- Create and maintain menu specifications and costing sheets
- Guide junior chefs and porters, ensuring culinary consistency and quality
- Manage food ordering and production logistics
- Maintain immaculate food storage and hygiene standards
- Track food production volumes, waste, stock levels, and costs for efficiency

Leadership & Collaboration
✔ Direct and inspire kitchen teams to uplift dining standards ✔ Support the Executive/Head Chef in maintaining a professional kitchen workplace ✔ Align with Searcys' brand ethos while fostering inclusivity and adaptability
Resource & Operational Excellence
✔ Optimise food inventory, minimising waste and controlling costs ✔ Implement HACCP and Health & Safety regulations flawlessly ✔ Collaborate on special events and bespoke dining experiences

✔ Develop creative, market-driven dishes tailored to the alta-end Private Members Club ✔ Incorporate seasonal locally-sourced ingredients while staying true to fine dining principles

Requirements
Essential
✅ Experienced Sous Chef or Junior Sous Chef with preped for high-end events, hotel kitchens, or exclusive fine dining ✅ Strong culinary leadership and mentoring skills ✅ Hands-on experience with menu development, cost control, and kitchen workflow management ✅ Mastery of HACCP and food safety regulations ✅ Passionate about culinary creativity and innovation ✅ Fluent mathematical and analytical skills

Desirable
✔ Formal culinary training or relevant qualifications ✔ Familiarity with private membership clubs or membership dining ✔ Fluency in French or Italian cuisine
Salary & Contract
✔ £45,000 annually (inclusive) ✔ 5 Days On, 2 Days Off scheduling with extended weekends in season
Working Hours
- Monday–Friday: 10:00am–6:00pm (Extended Fridays: 10:00am–9:00pm)
- Weekends: 08:00am–6:00pm
