Searcys are seeking a Sous Chef for their brand new Private Members Club at the National Gallery, collaborating with world-renowned Michelin-starred Chef Giorgio Locatelli. Located in the refurbished Sainsbury’s wing, this exclusive venue offers a high-end dining experience for members and guests. Searcys is committed to delivering exceptional service, premium-quality food, and a vibrant atmosphere.
The National Gallery, situated in Trafalgar Square, houses an unparalleled collection of Western European art, spanning from the Middle Ages to the 20th century. Featuring works by artists such as Leonardo da Vinci, Van Gogh, Turner, and Rembrandt, it provides a cultural experience unlike any other.

Job Details
- Salary: £45,000 (inclusive of Tronc)
- Working Pattern: 5 days over 7
- Venue Hours:
- Monday to Friday: 10 AM – 6 PM (excluding Fridays, which extend to 10 AM – 9 PM)
- Weekends: 8 AM – 6 PM
- Employment Type: Permanent
- Hours Per Week: 45
Responsibilities
The Sous Chef will be responsible for:
- Overseeing and assisting in preparation and presentation of all meals and service across the Private Members Club
- Leading and driving the brigade team in planning, developing menus, dishes, and culinary concepts
- Creating new menu specifications, including costing sheets
- Providing guidance to junior chefs and porters
- Managing food ordering and production logistics
- Controlling section-specific food storage areas, ensuring high standards
- Recording production volumes, waste, stock levels, and food cost concerns

Requirements
The ideal candidate should:
- Be driven by people and quality, ensuring industry-leading food standards
- Demonstrate exceptional kitchen management and act as an ambassador for Searcys’ legacy brand
- Bring innovative, inspiring culinary ideas for events and restaurant menus
- Support the Executive/Head Chef in fostering a professional, standard-aligned working environment
- Have previously worked as a Junior Sous Chef in events, hotels, or high-end restaurants
- Possess excellent mentoring and communication skills
- Showcase an analytical problem-solving approach and strong Health and Safety knowledge
