About the Role

Sous Chef (Montcalm Mayfair) is the linchpin of kitchen excellence—crafting unforgettable guest dining experiences while ensuring the highest technical proficiency from the team. Reporting directly to the Head Chef, you will drive kitchen operations, mentor staff, and maintain Montcalm’s reputation for refined, consistent luxury dining. Your leadership, technical mastery, and passion for service will ensure every plate exceeds expectations.

  • Location: Montcalm Mayfair, London.
  • Hours: Shift-based (including weekends, evenings, holidays as required).
  • Physical Demands: Extended time on feet, manual handling, high-pressure kitchen environment.

Key Responsibilities

  • Team Leadership & Mentorship

    • Supervise and inspire the kitchen team, including Junior Sous Chef, Chef de Partie, Commis Chefs, Pastry Chef, and Porters.
    • Ensure station responsibility, adherence to ** LTEOP (Line, Trays, Equipment, Organisation, Productivity )** protocols.
    • Manage staffing schedules, time-off requests, and disciplinary matters in collaboration with Head Chef.
    • Recruit, onboard, and train new recruits while evaluating performance.
    • Foster a positive, high-performing culture in the kitchen.
  • Kitchen Administration & Operations

    • Oversee daily operations to deliver peak efficiency, presentation, and quality.
    • Collaborate with the Head Chef on menu development, recipe manuals, and SOPs to reflect current >Menu trends and guest demands.
    • Quality assurance: Conduct regular tastings, line checks, and service evaluations.
    • Maintain strict food cost control, stock audits, and cost percent targets (targeted GP margins).
  • Health & Safety Compliance

    • Enforce HACCP, Food Safety, and Hygiene standards (Level 3 preferred, Level 2 required).
    • Train and ensure full staff compliance in food safety protocols.
    • Report and mitigate quality deviations.
  • Supplier & Inventory Management

    • Order and-quality check raw materials, ensuring use of approved suppliers.
    • Collaborate on inventory systems to optimize stock levels.
    • Monitor and track food spoilage, waste trends.
  • Cross-Departmental Coordination

    • Work with Front of House, concierge teams to fulfil VIP requests and special food requirements.
    • Address food-related guest feedback efficiently.
  • Administrative & Strategic Support

    • Generate reports for departmental efficiency, labor analytics.
    • Contribute to strategic planning (e.g., staffing projections, event menus).

Technical Expertise

  • Proven supervisory experience in luxury hotel kitchens (1-2 years preferred).
  • Certification: Food Hygiene Level 3 (essential: Level 2 minimum required).
  • Proficiency in food costing, yield audits, recipe development.
  • Experience managing high-volume, high-end service environments.

Soft Skills

  • Leadership with integrity: Ability to set and uphold service standards while fostering teamwork.
  • Problem-solving acumen: Handling crises under pressure with composure.
  • Attention to detail—ensuring every dish aligns with luxury expectations.
  • Patience and adaptability: Kitchen morale is your responsibility.
  • Communication: Bridging kitchen operations and guest service seamlessly.

Working Conditions

  • Flexible shift work: Weekdays, weekends, and evenings are the norm.
  • Phyical demands: Standing for extended periods, manual handling of heavy Pan pans, machinery.
  • Fast-paced & dynamic—success requires both stamina and creativity.
