Location: Quo Vadis Members Club & Restaurant, Soho, London

We are seeking a brilliant Sous Chef to join Harts Group as part of our exceptional culinary team at Quo Vadis, a historic restaurant and private members club in the heart of Soho, London.


About Quo Vadis

Quo Vadis traces roots back to the 19th century, a place once called home to Karl Marx. Renowned today as a Soho institution, it attracts an eclectic crowd hungry for the finer things in life. The critically acclaimed restaurant normally serves seasonal, Modern British Cuisine with a thoughtfully curated menu crafted by renowned MBE-awarded Chef Jeremy Lee and his talented team.

Upstairs sits an energetic private members club—complete with three elegant private dining rooms, all beautifully appointed and well-loved by diners.

Inspired by passion for exceptional ingredients, Jeremy’s dining experience is bold, generous, and essentially, reflective as his dynamic personality. Chef-lead development honours the finest regional ingredients from the UK and beyond, rooted in brilliant attention to detail, with sincerity for an exceptional team ethic.

The Sous Chef Role

Key Responsibilities:

  • Minimum 1 year’s experience as a Sous Chef at a high-quality, professional restaurant kitchen.
  • Manage all sections with confidence, demonstrating excellent delegating, leadership, and operational command.
  • Comprehensive understanding of ordering, wastage, stock management, chef rotas, cost control and margin analysis.
  • Deep knowledge of flavour balance, passion for culinary excellence, and a strong commitment to personal and professional growth.
  • Deep familiarity with current menus, ingredient expertise, allergen knowledge, and adherence to strict food safety and hygiene standards.
  • Strong team ethic, always exhibiting professional respect for colleagues and team members.
  • Consistently uphold exceptionally high standards in both food production and guest service.
  • Leadership within the team; a proactive trainer, guiding the team through regular training initiatives.
  • Clear communication and leadership in discussions and operations.
  • Ambassador role for the Harts Group brand, embodying a culture of warmth, generosity, and outstanding guest care.
  • Strong, clear command of English language for clear, timely communication.
  • Cultural appreciation of British food traditions and culinary Heritage.
  • Passion for Hospitality and a drive to continuously develop new skills.
