Sous Chef – The Nest (Under Harry’s)
Harry’s is where rustic charm meets culinary excellence—set against a backdrop of dark wood and traditional Italian Hospitality. Our restaurants are a haven of Italian flavours, specialising in hands-on pasta and pizza, crafted with precision and love for detail.
The Role
As a Sous Chef, you’ll collaborate with line chefs to uphold our standards for food quality. A leadership position with hands-on engagement, this role is ideal for someone eager to refine their team management skills while still enjoying the art of cooking.
With a sizeable kitchen team, you’ll appreciate the balance between:
- Ensuring bring-forward prep, delivery accuracy, and stork adherence during service.
- Leading the kitchen while maintaining a close eye on training, hygiene compliance, and staff morale.

Responsibilities
- Oversight & Compliance
- Confirm prep levels align with scheduled service.
- Ensure deliveries and stock are accurately processed by the Goods Receiver.
- Conduct daily due diligence checks across the kitchen.
- Monitor health & safety standards and hygiene protocols.

Team Development
- Train and mentor kitchen juniors to uphold excellence in execution.
- Support performance management procedures for kitchen staff.
- Enhance the working environment through positive communication.

Operational Accountability
- Supervise cleaning routines, including rotas.
- Assist the Head Chef & Senior Sous Chef to foster team cohesion.
- Oversee elemental and trunkable revenue targets (in partnership with management).
Requirements
- A proven track record as a Sous Chef in a high-volume restaurant setting.
- Exceptional culinary skills, with a passion for quality and innovation behind every dish.
- Strong leadership skills, coupled with clear communication and interpersonal agility.
- Pivoting gracefully under pressure in a dynamic kitchen.
- +2 years’ experience working within a team/hierarchy.
- Proficiency in stock control, general profile (GP) reporting, and food safety best practices.
- Adaptability to multi-tasking—supervising prep, station checks, and coordinating with delivery teams.
