Key Accountabilities

OPERATIONAL SUPPORT

  • Support the Head Chef and Executive Chef in the smooth running of daily kitchen operations

  • Supervise kitchen service to ensure exceptional food quality, consistency, and presentation

  • Coordinate kitchen service with Food & Beverage departments

  • Deputise for the Head Chef or Executive Chef when required

  • Ensure all kitchen operations run efficiently and effectively

PEOPLE MANAGEMENT & TRAINING

  • Support the leadership, motivation, and development of the kitchen brigade

  • Assist with rotas, payroll, and holiday planning

  • Help manage staff queries and people-related matters

  • Support departmental inductions and onboarding of new team members

  • Assist in delivering training and development programmes

  • Mentor and develop junior chefs


FOOD, COST & QUALITY CONTROL

  • Assist in maintaining food costs, GP, and effective stock control

  • Ensure mise en place and service standards are consistently met

  • Promote quality and consistency across all food outlets

  • Minimise waste and support cost-control initiatives

  • Work actively on the pass and in food production as required


FOOD & SERVICE EXCELLENCE

  • Support delivery of exceptional food across restaurants, banqueting, room service, and colleague dining

  • Ensure room service food is delivered to the highest standards of quality and temperature

  • Assist in overseeing colleague dining to ensure food is varied, nutritious, and well balanced

  • Consistently strive to exceed guest expectations


HEALTH, SAFETY & COMPLIANCE

  • Ensure compliance with food safety, hygiene, and HACCP regulations

  • Maintain high standards of health & safety across all kitchen areas

  • Report accidents, defects, or hazards in line with hotel procedures

  • Attend and complete all mandatory health & safety training


IDEAL SOUS CHEF

  • Previous experience as a Sous Chef or strong Junior Sous Chef within a luxury hotel or 5-star kitchen

  • Strong leadership, organisation, and communication skills

  • Passion for quality ingredients and refined cuisine

  • Highly organised with excellent time management skills

  • Ability to work under pressure while maintaining exceptional standards

  • (NVQ Level 3 or equivalent preferred)
