Rockwater Hove is Sussex’s most premier beachfront destination venue situated right on Hove seafront. Rockwater isn't just a restaurant; it's a lifestyle, an experience, and a home away from home.

Our inviting venue boasts a rooftop restaurant where the day begins with incredible breakfast, followed by a delightful shift to a luxurious small-plate sharing concept from midday until late. Sous Chef Role

As the Sous Chef at Rockwater, you will play an important role in our kitchen management team. You will work alongside the Head Chef to ensure the highest standards of food quality, food safety standards, health and safety standards and tight cost controls.

  • Assist in the day to day management of the kitchen, ensuring efficient workflow, timely food production, and adherence to health and safety standards.
  • Assist in the monitoring of stock levels of food and equipment, working with the Head Chef to oversee the placing of orders and minimise waste / excess stock.
  • Conduct regular inspections of the kitchen to maintain cleanliness and hygiene standards.
  • Oversee the preparation, cooking, and presentation of dishes to maintain high quality and consistency.
  • Provide guidance and training to kitchen staff, ensuring adherence to recipes, portion control and presentation standards.
  • Lead and motivate kitchen staff, fostering a positive and collaborative working environment.
  • Ensure that all dishes meet the required standard in terms of taste, appearance and portion size.
  • Monitor and address guest feedback, working with the Senior Chefs to make necessary adjustments.
  • Work closely with the Senior Chefs to implement cost control measures, such as portion control and waste reduction.
  • Collaborate with all departments within Rockwater to ensure smooth overall operations.
  • Compliance with legal requirements under the Health & Safety Act 1974 and food hygiene.

The Ideal Candidate

  • At least 1 years experience as a Sous Chef in a premium high volume venue.
  • Experienced in managing large teams.
