A fine-dining restaurant in London, led by a well-renowned chef, is seeking an exceptional Sous Chef to join its kitchen. The restaurant’s high-profile reputation and Michelin-calibre standards make this a senior role for an accomplished chef wishing to maintain their level within elite fine dining.

About the Role

Reporting closely to the Head Chef, the Sous Chef will:

  • Lead the kitchen during the Head Chef’s absence, ensuring smooth and flawless execution
  • Ensure consistency across all kitchen sections during every service
  • Collaborate on menu development, including new dishes, seasonal adjustments, and refined tasting menus
  • Manage ordering, stock control, and supplier relationships
  • Train, mentor, and develop chefs de partie and junior team members
  • Maintain strict compliance with food safety, hygiene, and HACCP regulations
  • Uphold the precision, discipline, and excellence expected in fine dining

Key Responsibilities

  • Run high-level services according to the restaurant’s exacting standards
  • Oversee execution across all kitchen sections to guarantee uniformity
  • Support development of new dishes, seasonal menus, and tasting menus
  • Handle procurement, stock management, and vendor relations
  • Develop, coach, and guide the kitchen brigade
  • Adhere to the highest standards of food safety and regulatory compliance
  • Maintain the restaurant’s distinguished kitchen standards

Requirements

  • Proven Michelin-starred experience as a Sous Chef (essential)
  • Refined technique and consistency across multiple kitchen sectors
  • Deep passion for produce, seasonality, and modern fine dining
  • Calm, organized leadership under pressure during busy services
  • Proven ability to train and develop kitchen staff
  • Strong grasp of food safety, cost control, and stock management
  • Right to work in the UK
