A DAY IN THE LIFE OF A SOUS CHEF AT THE WESTIN LONDON CITY
What you'll be doing...
Reporting to the Head Chef, you can expect your working day to include the following.
Managing various sections of the kitchen and ensuring agreed standards are achieved. Associate management, control of kitchen operations, deputise in the absence of the Head Chef, food ordering and other adminstrative tasks, attendance at required meetings, enforcing full Health & Safery and Food Hygiene compliance and assisting the menu development process. Ability to work across breakfast, a la carte, bar and banquet operations. To assist all sections of the kitchen in the production and service of food or the cleaning down of the section as and when required due to the workload Understanding and adhering to the company’s rules and regulations on policies and procedures relating to fire, hygiene, health & safety and licensing regulations. Ensuring a safe working environment identifying potential hazards and taking corrective action. Ensuring that all working areas of the kitchen, dry stores and refrigeration are maintained in a clean and hygienic condition at all times, Maintaining constant quality control of all food prepared and cooked, ensuring it is to the Head Chef’s and applicable kitchen standards. Working collaboratively with other Sous Chefs in ensuring overall smooth kitchen operations.

What We Need From You
We hire mostly on personality & potential but here are a few of our requirements...
To succeed in the role of Sous Chef, you will need the following qualities and skills:
Previous experience of people management, demonstrating collaboration, innovation and the ability to motivate a brigade of chefs Ability to review business levels and undertake ordering and staffing in line with business requirements The ability to adhering to the company’s rules and regulations on policies and procedures relating to fire, hygiene, health & safety, and licensing regulations The ability to manage various sections of the kitchen, whilst ensuring health & safety standards are met To be flexible in your approach, and able to assist all members of the kitchen brigade when required A team player who thrives in the hustle and bustle of a busy kitchen department Someone who is passionate about food and willing to learn Previous experience in a similar role, at either Chef de Partie or Sous Chef level An understanding of quality control and kitchen standards
