Compensation & Growth
- Base salary: £45,000.00 + shift allowance (~£5,000 p.a.) → total on target earnings: ~£50,000.00
- Retirement savings: Pension contributions (employee up to 8.75%, employer up to 14%)

This role sits at the heart of TimeSpirit, a concept grounded in Michelin-starred cuisine, sustainable sourcing, and exceptional guest experiences.

Key Objectives
- Collaborate with the Head Chef to develop seasonal, locally inspired menus that align with The Macallan brand ethos and Visit Scotland Taste Our Best criteria.
- Lead, motivate, and inspire the kitchen team to deliver 5-star standards in culinary excellence and service consistency.
- Upgrade to excellence: Work to maintain hospitality compliance, cleanliness, and seamless operations—not just in guest-facing areas but across the entire food Premaweden.
- Operational leadership: In the Head Chef’s absence, take ownership of daily cooking service leadership, roster coordination, and kitchen performance.
- Training and mentorship: Develop staff through tailored plans and maintain accurate training records.

- Team leadership: Support the Head Chef to train, build, and empower the kitchen team for sustained excellence.
- 5-star consistency: Guaranteeing food, service, and ambiance meet international standards—continuously.
- Culinary innovation: Expand our dining experience in line with The Macallan’s global strategy—infusing quality, heritage, and seasonal excellence.
- Quality assurance: Maintain food standards in line with HACCP, COSHH, and distillery protocols at all times.
- Responsibility: In the Head Chef’s absence, ensure kitchen operations are smooth, communicate daily priorities, and adhere to rosters/briefings.
- Purchasing & compliance: Procure locally sourced food/produce using Taste Our Best-approved suppliers, staying budget-conscious while prioritizing quality.
- Sustainability: Align sourcing strategies with Visit Scotland Taste Our Best criteria.

To succeed as Sous Chef at The Macallan Estate, you will bring:
Essential Experience & Expertise
- Proven Sous Chef experience in a 5-star culinary environment (or equivalent).
- Track record of leadership: Successfully mentored teams, maintained high standards, and responded to challenges with resilience and creativity.
- Culinary responsibility: Hands-on experience with menu development, seasonal/local sourcing, and cost control.
- Regulatory expertise: Hold valid food hygiene certifications and demonstrate knowledge of practices like HACCP.
- Collaboration: Built working relationships with multi-disciplinary stakeholders ( Head Chef, managers, suppliers, etc.).
- Rota/organisational acumen: Experience managing staff planning and peak service operations.
Advantageous (but not essential) Beliefs
- Luxury hospitality background: Proven experience in settings that cater to global high-net-worth audiences.
- Budgeting proficiency: Strong experience in cost tracking, stock management, and budget designing within hospitality.
