About the Role
As Sous Chef at Hoar Cross Hall, you’ll play a central role in supporting daily kitchen operations, ensuring kitchen efficiency, and upholding the highest standards of meal quality. You’ll collaborate closely with the Head Chef, supervising staff, training new team members, and ensuring seamless management of kitchen activities. In the Head Chef’s absence, you’ll take full responsibility for the kitchen—a testament to your leadership and expertise.
Key Responsibilities
Leadership & Kitchen Management
- Deputise for the Head Chef when not present
- Lead, mentor, and inspire the kitchen team to maintain a positive working environment
- Oversee staff performance, providing regular feedback and professional development
- Collaborate in rota planning, ensuring adequate staffing for operational demands
Food Quality & Menu Development
- Garantee all restaurant and buffet dishes adhere to Hoar Cross Hall’s high standards
- Maintain consistency in presentation, quality, and taste through creative application of techniques
- Contribute to monthly menu design, using locally sourced, fresh, and seasonal ingredients where possible
- Work with the Head Chef to minimise waste and optimise cost-effective production

Stock Control & Supplier Coordination
- Build and maintain relationships with suppliers, having quality and value for money as top priorities
- Overseen ordering processes, stock inventory, and stock levels—particularly in the Head Chef’s absence
- Inspect goods on receipt, identifying and returning any substandard produce to suppliers
- Assist with monthly stocktake evaluations and filling weekly time sheets
Health, Safety & Compliance
- Ensure 100% adherence to UK Food Hygiene legislation, Health & Safety policies, and COSHH protocols
- Promote rigorous cleanliness standards through assigned cleaning schedules
- Enforce uniform, hygiene, and PPE guidelines throughout the entire team
- Conduct daily temperature checks for food and refrigeration systems
- Follow and apply proper Fire and Evacuation procedures when needed
Communication & Guest Service
- Maintain regular communication with the Head Chef, Restaurant Manager, and senior leadership through daily briefs and weekly meetings
- Address and professionally resolve guest feedback or complaints in the Head Chef's absence
Required Skills & Experience
- Proven experience as a Sous Chef or in high-level Commis/Deputy Chef de Partie (CDP) roles, ready to take the next step up
- Deep passion for fresh, seasonal, locally sourced ingredients and creative menu development
- Exceptional leadership skills, with confidence to inspire and coach a team
- Strong organisation, time management, and attention to detail in fast-paced environments
- Proactive approach with a resilient attitude and ability to perform under pressure
- Comprehensive knowledge of food safety, hygiene standards, and compliance requirements

Shift Patterns & Compensation
- Full-Time: 45 hours per week, five days out of seven (including weekends, holidays, and late shifts)
- Shift Timings:
- 08:00 – 17:30 hrs
- 13:30 – 23:00 hrs
- Salary: £35,512.26 per annum
Note: High flexibility is required to meet business needs, including occasional shifts outside core hours.
