Blakeney Manor Hotel is an elegant coastal retreat overlooking the salt marshes and sea in the heart of beautiful North Norfolk. Rooted in history and rich in character, our Grade II listed manor combines timeless hospitality with exceptional food, gracious service, and unforgettable guest experiences.

Part of The Coaching Inn Group — proudly named Which? Hotel Group of the Year — we are looking for an experienced and passionate Sous Chef to join our talented kitchen brigade.

About the Role

Working closely with our Head Chef, you will play a key leadership role in delivering refined modern British cuisine inspired by the Norfolk coastline and crafted using exceptional local produce. From Cromer crab and Brancaster mussels to Norfolk-reared meats and locally smoked fish, our menus celebrate seasonality, flavour, and creativity.

As a Sous Chef, you will support the Head Chef in leading the kitchen operation, driving standards, mentoring the team, and ensuring every guest receives a memorable dining experience.

Key Responsibilities

  • Supporting the Head Chef with the overall management of the kitchen
  • Leading the kitchen team during service and maintaining high standards throughout
  • Assisting in the creation and development of seasonal menus
  • Training, mentoring, and motivating junior chefs
  • Managing stock control, ordering, and food cost awareness
  • Ensuring compliance with food hygiene, HACCP, and health & safety standards
  • Maintaining consistency in food quality, presentation, and service
  • Taking responsibility for the kitchen in the Head Chef’s absence

What We’re Looking For

  • Previous experience as a Senior Sous Chef or Sous Chef in a quality-led kitchen
  • Strong leadership and communication skills
  • Passion for modern British cuisine and locally sourced ingredients
  • Ability to thrive in a fast-paced, high-standard environment
  • Strong organisational skills and attention to detail
  • A calm, positive, and hands-on approach to kitchen leadership
  • Commitment to delivering exceptional guest experiences
