Sous Chef – Private Members Club at The National Gallery, London
Location: London
Salary: Up to £45,000 Inclusive of Tronc
Club Operating Hours
Private Members Club:
- Monday to Thursday: 10 AM – 6 PM
- Friday: 10 AM – 9 PM
- Weekends: 8 AM – 6 PM
About the Role
Searcys are seeking a Sous Chef for their newly inaugurated Private Members Club at The National Gallery, working alongside world-renowned Michelin-starred Chef Giorgio Locatelli. Based in the refurbished Sainsbury Wing, this prestigious venue offers an exceptional dining experience rooted in artistic grandeur, a short walk from Trafalgar Square.

Responsibilities
As Sous Chef, your role involves:
- Oversight & Support:
- Co-ordinate and assist in the preparation, presentation, and service of all meals.
- Ensure the club’s high culinary and service standards across all shifts.

Menu Development & Culinarian Innovation:
- Lead the kitchen brigade in menu planning, creative concept ideas, and recipe innovation.
- Develop new menu specifications and costing to align with client expectations.

Team Leadership & Training:
- Provide mentorship to junior chefs, porters, and kitchen staff with people-centric focus.
- Commission ordering and manage food production to maintain efficiency.

Operational Excellence:
- Manage food storage and hygiene across assigning sectional areas.
- Maintain precise tracking of food production volumes, waste, stock, and cost management records.

Qualifications & Skills
You must:
- Thrive in fast-paced high-end environments, driven by service and food quality.
- Identify as an ambassador of Searcys’ strong brand legacy and uphold its signature standards.
- Inspire culinary creativity for events, bifonnier menus, and special experiences.
- Collaborate closely with the Exec/Head Chef, ensuring collaboration meets both client expectations and company quality benchmarks.
Minimum Requirements:
- Proven experience in Junior Sous Chef roles in ottoman high-end events, luxury hotels, or 5-star restaurants.
- Dependable communication and mentoring skills.
- Strong analytical and problem-solving acumen, with exing HSE safety compliance proficiency.
