Are you a seasoned hotel stewarding manager looking for a dynamic, high-energy environment? You already know exactly what it takes to run a flawless back-of-house operation at scale—now, bring that premier expertise to an exciting new arena.

The Hippodrome Casino is thrilled to announce a brand-new role within our Kitchen / Back of House team: Stewarding Manager. We are looking for an exceptional leader to champion our culinary environments and set the ultimate standard for cleanliness and efficiency.

The Package & Role

  • Salary: £37,180 base + service charge (Expected total package up to £44,000).
  • Reporting directly to the Executive Chef, you will serve as the core leader coordinating all back-of-house stewarding operations.
  • You will directly manage the Stewarding Supervisor and a team of Stewards to ensure our kitchens remain immaculate, fully compliant, and seamlessly supportive of our culinary teams.
  • This is a full-time position (48 hours per week) requiring flexibility to work shifts that cover evenings, nights, weekends, and holidays in line with business needs.

Key Responsibilities

  • Lead and manage the stewarding teams across the main kitchen and the Sports Bar.
  • Oversee daily dishwashing operations alongside comprehensive overnight deep-cleaning shifts.
  • Plan rotas, conduct pre-shift briefings, and manage team performance to align with peak trading hours and cleaning schedules.
  • Direct the safe storage and use of cleaning chemicals in strict compliance with COSHH regulations.
  • Manage back-of-house consumables and cleaning chemicals to effectively control costs and waste.
  • Oversee the daily operations, supervision, and full stocking of the staff canteen.
  • Actively enforce strict food hygiene and health and safety procedures across the venue.
  • Induct, train, and support new starters, while driving talent retention and interdepartmental communication.

  • Experienced Leaders: Professionals with previous experience in back-of-house supervision, making this an ideal pivot for established hotel stewarding managers.
  • Technical Experts: Individuals with a strong, foundational understanding of cleaning, hygiene, and health and safety standards.
