An exciting opportunity has opened at Jang, located on the stunning Mezzanine of the iconic Royal Exchange. We are looking for a skilled and passionate Sushi Chef to join our team, someone who takes pride in precision, quality ingredients, and beautifully crafted sushi. This is a fantastic opportunity to work in a vibrant, high-energy restaurant where creativity, technique, and consistency are valued.
Requirements
- Proven experience as a Sushi Chef or Sushi CDP in a quality-driven kitchen
- Strong knife skills and knowledge of sushi preparation techniques
- Experience preparing nigiri, sashimi, maki, and specialty rolls
- Understanding of fish quality, handling, and food safety
- High attention to detail in both flavour and presentation
- Ability to remain calm during fast-paced service
- A proactive and organised approach to your section
- A positive team player who works well with the Head Chef and kitchen team
- Passion for Japanese cuisine and high-quality ingredients
- Full right to work in the UK

Responsibilities
- Preparing high-quality sushi and Japanese dishes with precision, consistency, and attention to detail
- Ensuring every plate reflects the highest standards of presentation and flavour (nigiri, sashimi, rolls, and specialty items)
- Working closely with the Head Chef and wider kitchen team to maintain quality, organisation, and a smooth service

Benefits
- Salary: Up to £16.22 per hour (depending on experience)
- Contract: 40-hour contract
- Schedule: Monday to Saturday
- Holidays: 28–30 days per year (increasing with service)

About Jang
Jang is open for lunch and dinner, Monday to Friday and for dinner on Saturday. Surrounded by The Royal Exchange’s famous murals, this is an intimate and sumptuous space with nods to Asian heritage throughout and is just as well suited for a corporate catch-up or a business dinner as a long lunch or a date night.
