About Us

We revolutionised the restaurant industry in 1997 with our iconic conveyor belt and colour-coded dishes, challenging how the UK approached dining. We pride ourselves on fresh, authentic Japanese food, particularly sushi, but also offer a diverse range of hot street food—traditional favourites and bold fusions bursting with ummami-rich flavours. Today, we operate over 70 restaurants worldwide, have 300+ kiosks in the UK, and distribute our groceries and pre-pack sushi in major UK supermarkets.

Core Responsibilities

  • Full kitchen competence – proficient in food prep, cleaning standards, and regulations.
  • Safety & sanitation – upholds Health & Safety protocols, ensures cleanliness, and maintains kitchen safety.
  • Fast-paced kitchen execution – skilled in managing tight deadlines in a Quick Service Restaurant (QSR) environment.
  • Inventory & waste management – monitors stock levels to minimise waste.
  • Station responsibilities – assists with set-up, handover, and close-down duties.
  • Operational knowledge – fully trained to create a safe work environment for staff and guests.
  • Menus & consistency – possess detailed knowledge of product specs for delivering menu standards.
  • Versatile operation –
    • Expertise in rolling sushi.
    • Pass work coordination.
    • Hot section and raw product prep.
  • Team-first mindset – YO! Team values include contributing to a superior guest experience, efficiency, and profitability.
  • Paperwork & compliance – meticulously logs deliveries, wastage, and temperatures.
  • Timely cleaning – meets cleaning tasks as prescribed by the Trail electronic system.
