About the Role
As Head Waiter, you’ll lead the front-of-house team, ensuring seamless operations, service excellence, and a high-standard guest experience.
Key Responsibilities
This is a high-involvement role requiring hands-on leadership during service:
- Service & Guest Experience
- Deliver consistent, engaging service across all shifts, prioritising guest satisfaction.
- Take ownership of your section, leading smooth operations with precision and attention to detail.
- Guide guests effectively, providing knowledgeable menu recommendations and adapability.
- Anticipate needs to create a memorable and welcoming experience aligned with Medlock Square’s standards.

Section Leadership
- Coach Servers and Runners in high-performance teamwork, balancing pacing, quality, and efficiency.
- Bridge the gap between Front of House and Back of House for smooth service flow.
- Optimise table turns and timing to support both operational performance and guest experience.

Operational Excellence
- Ensure sections are fully prepared for openings and closings, adhering to health, safety, and cleanliness protocols.
- Maintain high standards during high-volume periods (e.g., matchdays, events) without compromising service quality.

Team Development & Culture
- Support onboarding and upskilling through hands-on mentoring, fostering growth.
- Set a professional example, nurturing a dynamic, collaborative team culture.

Standards & Compliance
- Comply with all health, food safety, and licensing regulations.
- Uphold service standards, personal presentation, and accountability.
Skills, Knowledge & Expertise
- Essential
- Proven experience as a Waiter/Server in a premium/high-volume environment.
- Deep understanding of service standards and guest experience protocols.
- Confident communicator with outstanding interpersonal skills.
- Ability to lead a section and support team performance under pressure.
- Stay composed in fast-paced environments (e.g., matchday rushes).

- Desirable
- Prior experience as Head Waiter/Senior Server.
- Knowledge of wines, cocktails, or premium food service.
- Background in high-energy or concept-driven dining.
