Wine Manager / Head Sommelier
A bustling modern Australian restaurant in the heart of Soho is looking for an experienced and dynamic Wine Manager to lead its wine program and cement its place as the leading destination to experience Australian wine in London. This role offers an opportunity to work with Australia’s most iconic wineries, Wine Australia, and Tourism Australia to champion Australian wine to a UK audience, with the goal of achieving a Star Wine List award.
Milk Beach is a leading modern Australian restaurant in London, located in a spectacular venue in Soho. It is one of London’s favourite premium casual restaurant destinations, featuring an 80-cover restaurant, a 10-spot bar, and an additional 60 covers in the outdoor courtyard. The restaurant offers a seasonal a la carte lunch/dinner menu showcasing modern Australian cuisine with coastal, barbecue, and Southeast Asian and Mediterranean influences. Australian hospitality at Milk Beach is professional, knowledgeable, and passionate, yet engaging, friendly, and fun.
Requirements
- 2+ years as a Wine Manager or Supervisor and/or Head Sommelier
- WSET Level 3 or Diploma certification, or equivalent knowledge
- Previous restaurant management experience is valued, but not required
- Service-oriented with a social, high-energy, and engaging personality
- Natural ability to build rapport with guests and staff
- Strong business acumen with high attention to detail for managing budgets, sales, and inventory
- Good understanding of Australian culture and hospitality
- Genuine interest in and knowledge of Australian wine and its unique regional characteristics
- Passion for Learning & Development (L&D) and Hospitality
- Someone who loves dining out and is plugged into the London restaurant and wine scene and trends

Responsibilities
- Curate a unique wine list showcasing the outstanding quality of Australian wines, targeting a Star Wine List award in 2027
- Foster and grow relationships with suppliers, Australian winemakers, Wine Australia, and Tourism Australia
- Make Milk Beach the go-to destination for Australian wine in London
- Run wine operations with full operating and financial responsibility
- Ensure impeccable, knowledgeable, approachable, and fun wine service
- Meet sales targets and gross profit targets
- Manage wine inventory and stock, ensuring proper storage, rotation, and ordering for optimal COGS management
- Host ‘Toast Australia’ dinner series with iconic Australian winemakers and winery owners
- Host trade tastings alongside Amelia Jukes and Wilem Powel
- Provide team training and mentorship, developing front-of-house team members' wine knowledge
- Build and maintain strong relationships with winemakers, suppliers, and distributors globally to secure exclusive offerings
